RICE WITH GRILLED BEEF AND GARDEN VEGETABLES CURRY
Ingredients:
- 65g Basmati rice (raw)
- 150g lean beef
- 230ml water
- 60ml canned coconut milk
- 1 teaspoon extra virgin olive oil(7g)
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon red pepper (cayenne), divided
- 30g onion, coarsely chopped
- 2 clove garlic, finely chopped
- 75g broccoli florets
- 75g cauliflower florets
- 50g carrot
- 50g Bell pepper
- 50g tomatoes
- Salt and pepper to taste
Instructions:
- First rinse the rice well under running water and cook the rice with 130ml of water, pinch of salt and in medium low heat for approximately 15minutes. Once done keep and set aside.
- Meanwhile thinly slice the beef and marinate using salt, pepper, cayenne pepper and let rest for 30 minutes. Once will marinated take a non-stick pan and grill the meat till well cooked through.
- In a saucepan, heat oil over medium-high heat until hot. Add curry powder, salt, cumin and ground red pepper; cook and stir 1 minute. Add onion and garlic; cook and stir 1 minute longer.
- Add carrots and 100ml remaining water. Heat to boiling. Reduce heat to medium; cover and simmer 10 minutes.
- Add broccoli, cauliflower and bell pepper; cover and simmer 4 to 6 minutes or until vegetables are crisp-tender.
- Once done add coconut milk and let simmer for 5 more minutes till the vegetables are soft. Then Serve over rice along with Grilled beef.
