PUMPKIN PIE PROTEIN OVERNIGHT OATS WITH CHIA

 

Ingredients:

  • 150g Greek yogurt 
  • 150ml Unsweetened almond milk 
  • 150g pumpkin puree
  • 2 tablespoon sugar free syrup
  • 1/2 teaspoon vanilla extract
  • 1 scoop whey protein powder (35g) vanilla flavour
  • 45g rolled oats 
  • 2 teaspoons chia seeds
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 20g protein crackers, crushed

Instructions:

  1. In a medium bowl, mix together greek yogurt, almond milk, pumpkin puree, vanilla, protein powder and syrup until well combined. Stir in oats, chia seeds and spices. Pour into a glass jar or container and place in fridge for 4 hours or overnight.
  1. Top with crushed protein crackers before serving.
