MUSTARD-STUFFED CHICKEN

Ingredients:

  • 200g boneless chicken breast
  • 45g low-fat mozzarella, torn into small pieces
  • 1 tablespoon wholegrain mustard
  • 5g spring onions
  • salt and pepper to taste

Instructions:

  • Heat oven to 200C/fan 180C/gas 6. 
  • Mix the cheese and mustard along with a dash of salt and pepper. 
  • Cut a slit into the side of each chicken breast, then stuff it with the mustard mixture.  
  • Next place the chicken on a baking sheet, sprinkle salt and pepper and roast for 20-25 minutes.
  • Once done garnish with chopped spring onions and serve.
