SWEET POTATO & CHICKEN CURRY

Ingredients:

  • 200g chicken thigh fillets, each cut into large chunks
  • 250g sweet potato, peeled and cut into bite-size pieces
  • 1 teaspoon extra virgin olive oil (7g)
  • 50g red onion, cut into wedges
  • 1 tablespoon curry paste
  • 100g tomatoes, roughly chopped
  • 100ml water
  • Salt to taste

Instructions:

  • Cook the sweet potatoes in boiling, salted water for 5-7 minutes until just tender. Drain well, then set aside. Meanwhile, heat the oil in a large frying pan, then add the chicken and onion. Cook for 7-10 minutes until the chicken is browned and cooked through. Stir in the curry paste, cook for 1 minute, add the tomatoes, and then cook for another minute.
  • Pour in 100ml boiling water and mix well. Simmer for 5 minutes, then add in the potatoes and heat through for approximately another 2 minutes. 
  • Season with salt to taste and serve warm.
