CREAMY BEEF ONE-POT NOODLES

Ingredients:

  • 150g Ground Red Meat (Lean Beef, Veal, Lamb Leg, Kangaroo, Goat, Camel)
  • 1 teaspoon extra virgin olive oil (7g)
  • 125g low-calorie Slendier Noodles
  • 50g onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 100g tomato, halved
  • 50ml vegetable broth
  • 100ml low-fat almond milk 
  • 1g nutritional yeast 
  • 5g parsley
  • Salt and pepper to taste

Instructions:

  • Cook the pasta according to the package directions.
  • In a large pot over medium heat, add the olive oil, ground beef and onion and cook for 7-10 minutes until the meat is no longer pink.
  • Add the garlic and tomato paste and cook for 3 more minutes, stirring occasionally.
  • Add the tomatoes and cook for 3-5 more minutes, until the skins begin to wrinkle and the tomatoes begin to release liquid.
  • Season with salt and pepper, then add the vegetable broth, milk, and noodles and stir until combined.
  • Bring to a boil, then cover, reduce heat, and let simmer for 10 minutes or until most liquid is absorbed.
  • Add the nutritional yeast and stir until combined.
  • Remove from heat and sprinkle with chopped parsley.
  •  Serve immediately and enjoy!
