MUSTARD-STUFFED CHICKEN

Ingredients:
- 200g boneless chicken breast
- 45g low-fat mozzarella, torn into small pieces
- 1 tablespoon wholegrain mustard
- 5g spring onions
- salt and pepper to taste
Instructions:
- Heat oven to 200C/fan 180C/gas 6.
- Mix the cheese and mustard along with a dash of salt and pepper.
- Cut a slit into the side of each chicken breast, then stuff it with the mustard mixture.
- Next place the chicken on a baking sheet, sprinkle salt and pepper and roast for 20-25 minutes.
- Once done garnish with chopped spring onions and serve.
