Ingredients: The ingredient amounts are for four servings.
- Chicken Breast 2, cooked and shredded
- Capers 2 tbsp
- Chives 2 tbsp, chopped
- Olive Oil 1 tbsp
- Salt pinch
- Black Pepper 1 twist
- Pita Pockets 4, small
- Romaine Lettuce 250g or 8.8oz
- Avocado 2, medium
- Boiled Eggs 2, soft
- Greek Yoghurt 100g or 3.5oz, 0% fat
- Mayonnaise 1 tbsp, light
- Dijon Mustard 1 tsp
- Red Onion ½ small
- Cucumber 1, large
Instructions:
Add the shredded chicken, avocado, and chopped eggs to a large bowl. Lightly
mash together with a fork.
Add the Greek yogurt, mayonnaise, Dijon mustard, and olive oil. Mix until well
combined and creamy.
Fold through the red onion, cucumber, capers, and chives. Add salt and pepper to
