FOIL BAKED CHICKEN WITH VEGGIES

 

Ingredients:

  • 150g boneless chicken breast
  • 50g Cherry or Grape Tomatoes, cut in half
  • 200g Zucchini, sliced thin
  • 1 onion, sliced thin
  • 1 tsp Olive Oil
  • pinch of salt
  • pinch of pepper
  • 1 tsp Garlic Powder
  • 1 tsp Dried Basil
  • 1 Lemon

Method:

Step 1

Preheat the oven to 375 degrees. Take 4 pieces of aluminium foil, about 10” each, and place on a large glass baking dish, folding up the edges to make a “packet”.

Step 2

Evenly distribute the tomatoes, zucchini, and onion in each of the 4 packets. Place the chicken on top. Drizzle each packet with olive oil and sprinkle evenly with salt, pepper, garlic powder and basil. Squeeze lemon juice on top.

Step 3

Using another piece of foil, place on top of the Chicken/veggies and seal the edges tightly. Repeat with other foil packets.

Step 4

Bake for 25-30 minutes until vegetables are tender and the chicken is thoroughly cooked.
