BAKED WHITE FISH WITH HERB CAULIFLOWER SALAD

 

Ingredients:

  • 150g white fish (cod, Grouper, halibut, Snapper etc.)
  • 200g finely grated cauliflower 
  • 20g parsley
  • 20g fresh mint leave
  • 1 tsp olive oil
  • 20g pitted olives 
  • 1 lemon
  • Salt 
  • Pepper

Method:

  • Preheat the oven to 200c. Finely chop the parsley and the mint.
  • Prepare the fish by placing on a parchment paper in a baking dish and rub with olive oil.
  • Season with salt and pepper.
  • Sprinkle lemon juice and the fresh herbs.  Bake in the oven for 15minutes or until the thickest part is cooked.
  • Meanwhile finely chop the olives. Zest the juice of the lemon.
  • In a large bowl mix together the grated Cauliflower, herbs, olives, lemon zest, and some lemon juice.
  • Season the salad with salt and pepper.
  • When the fish is cooked serve with the cauliflower salad.
