Ingredients:

  • 200g Chicken thigh
  • 1 teaspoon extra virgin olive oil (7g)
  • 50g onions, chopped
  • 100g green bell peppers, chopped
  • 100g canned diced tomatoes, with their juices
  • 1 clove of garlic, minced
  • 1/2 teaspoon dried rosemary
  • 50ml water
  • 0.2g sesame seeds , garnish
  • Salt and pepper to taste

Instructions:

  1. Sprinkle both sides of the chicken with salt and pepper. Set aside.
  2. Heat a skillet over medium-high heat and add the oil.
  3. Next, add the chicken to the skillet and cook for 4 minutes on each side. Transfer chicken to a large plate, cover, and set aside.
  4. Add chopped onions, bell peppers, garlic, and rosemary to the pan and cook, stirring occasionally, for 2 minutes.
  5. Add water and bring to a boil. Cook for 2 to 3 minutes, stirring occasionally until almost all of the water has evaporated.
  6. Stir in the tomatoes and add the chicken back to the pan. Reduce heat to low, cover, and simmer for 25 minutes until chicken is cooked through.
  7. Taste and add additional salt, if needed.
  8. Once done Sprinkle the sesame seeds and serve.
