Blueberry Yogurt Bagels

Ingredients: The ingredient amounts are for six servings.
- lour 240g or 8.5oz
- Greek Yoghurt 480g or 17oz
- Blueberries 30g or 1oz
- Baking Powder 1 tsp
- Salt ¼ tsp
- Egg 1, beaten for egg wash
Instructions:
Preheat the oven to 180°C and line a baking tray with parchment paper.
In a large bowl, combine the bread flour, Greek yogurt, baking powder, and salt.
Mix until a dough starts to form. Knead the dough until smooth. If it feels too sticky,
add a little extra flour as needed. Gently fold in the blueberries, trying not to crush
them too much.
Transfer the dough to a lightly floured surface and divide it into 4 to 6 equal
portions. Shape each portion into a bagel by rolling it into a rope and joining the
ends, or by forming a ball and making a hole in the centre.
Place the bagels on the lined tray and brush the tops with beaten egg. Bake for 20
to 25 minutes until lightly golden and cooked through.
Finish under the grill for 2 to 3 minutes to deepen the colour on top, keeping a
close eye on them so they do not burn. Leave to cool slightly before serving.
