SWEET POTATO BANANA PANCAKES

Ingredients:

  • 250g sweet potato, cubed
  • 120g egg whites
  • 1 teaspoon extra-virgin olive oil (7g)
  • 100ml unsweetened low-fat almond milk
  • 30g Oats, ground into flour
  • 1 scoop vanilla protein powder (35g)
  • 10g flax seeds
  • 1 teaspoon pumpkin pie spice 
  • ½ teaspoon baking powder
  • 60g banana, sliced
  • 20g almonds, chopped

Instructions:

  1. Fill a pot with water and bring to a boil. Stir in sweet potato and return to a boil. Cook until sweet potato is tender, 7 to 10 minutes; drain.
  2. Mash sweet potato in a small bowl with a fork.
  3. Mix mashed sweet potato, egg whites, milk, oat flour, protein powder, flax seeds, pumpkin pie spice, and baking powder in a bowl. Stir in chopped banana, almonds until batter is combined.
  4. Spray oil in a non-stick skillet over medium heat. Pour enough batter into the skillet to create a 4- to 6-inch pancake. Cook, flipping once, until golden brown, 3 to 5 minutes per side.
