BBQ CHICKEN POWER BOWL

Ingredients:

  • 150g boneless chicken breast
  • 2 tablespoon BBQ sauce
  • 65g rice (raw weight)
  • 130ml water
  • 50g kale
  • 80g shredded cabbage
  • 50g avocado
  • 1 tablespoon tahini
  • Salt to taste

Instructions:

  1. Cook the rice in 130ml water for approximately 15-25 minutes with a pinch of salt.
  2. Preheat the oven to 375 degrees.
  3. Cut the chicken breast in half (longways).
  4. Place the chicken on a baking sheet and glaze it with BBQ sauce. 
  5. Bake for 30 minutes or until fully cooked.
  6. Toss the kale, cabbage, and tahini. Season with salt to taste. 
  7. Place the cooked rice into a bowl then top with the sliced baked chicken, avocado, and salad.
  8. Serve and enjoy!
