GRILLED FISH WITH SAFFRON & CARROT NOODLES
Ingredients:
- 125g low calorie Slendier Noodles, well rinsed
- 150g Boneless White Fish Fillet (Barramundi, Basa, Prawns, Calamari, Dori, Ling, Snapper, Whiting)
- 150ml water
- 150g Carrots, peeled and pared into strips
- 100g bell pepper, deseeded and thinly sliced
- 50g Peas
- 1/2 teaspoon saffron
- 1 tablespoon Sweet Chilli Sauce
- 1 tablespoon Soy Sauce
- 1 tablespoon lime juice
- 5g Chives, Fresh
- 30g spring onions, chopped
- Salt and pepper to taste
Instructions:
- Preheat the grill.
- Put the water and saffron into a large saucepan and bring up to the boil. Reduce the heat and simmer for 5 minutes, then add the carrot, pepper, peas and noodles. Simmer gently for 5-6 minutes, or until the noodles are tender.
- Meanwhile, arrange the fish fillets on the grill rack. Mix together the chilli sauce, soy sauce and lemon or lime juice. Brush over the fish and season with black pepper. Grill for 5-6 minutes, basting often with the chilli sauce mixture, until the fish is cooked. The flesh should be opaque and should flake easily.
- Serve the noodle mixture in to a bowl and sit the fish fillets on top. Serve, garnished with chopped fresh chives or spring onions.
