BASIL PRAWNS WITH SPINACH FETTUCCINE

 

Ingredients:

  • 150g prawns
  • ¼ teaspoon black pepper
  • 1 tablespoon extra-virgin olive oil
  • ¼ tablespoon Dijon mustard
  • 15g fresh basil
  • 1 teaspoon parsley
  • 2 green spring onion
  • salt as required
  • 65g raw pasta fettuccine
  • 75g spinach
  • Water as required

Method:

Step 1 / 6

First, take a medium sized deep-bottomed vessel and place it on medium flame. Then, pour and boil good amount of water in it. Also, add little amount of extra virgin olive oil and salt as required. Then, transfer the fettuccine pasta in it. Cook until they become soft and tender. Once done, drain the water and transfer the boiled pasta in a medium sized bowl.

Now, neatly wash and clean prawns under running water. Remove the excess water with the help of a tissue paper. Make sure that they are completely dry. Then, sprinkle black pepper on dry prawns. Keep aside and let them rest for at least 15 minutes.

Next, take a small sized pan and place it on medium flame. Then, add and heat little amount of extra virgin olive oil in it. Now, add Dijon mustard, chopped basil in the pan. Also, add salt as required. Mix well and keep aside for a while.

Now, take another small sized pan and place it on high flame. Then, add and heat little amount of extra virgin olive oil in it. Now, add green onions along with boiled spinach, Once done, turn the flame off and keep aside for a while.

Then, take another large sized pan and place it on medium flame. Now, add and remaining amount of extra virgin olive oil in it. After that, neatly place the dry sprinkled prawns in the pan and cook them properly from both the sides.

Now, take a serving dish and transfer the boiled pasta in it. Then, transfer the prepared spice mixture over it. Next, add the prepared onion and spinach over it. Then, neatly place the cooked prawns over it. Now, toss gently. Garnish with parsley and serve immediately.
