BLACKENED FISH SANDWICH WITH CABBAGE

Ingredients:

  • 150g White Fish (Barramundi, Basa, Prawns, Calamari, Dori, Ling, Snapper, Whiting)
  • 1 teaspoon extra virgin olive oil (7g)
  • 1 tablespoon low-fat Greek yogurt
  • 1/2 teaspoon sriracha sauce
  • 1 teaspoon lime juice
  • 1 tablespoon blackened seasoning  (ingredients include a mixture of chili pepper, garlic and onion powder, black pepper, oregano, and thyme)
  • 1 whole-wheat sesame seed bun
  • 50g shredded red cabbage
  • 30g pickled Jalapeno pepper

Instructions:

  1. Combine the yogurt, sriracha, and lime juice. Set aside.
  2. Heat the oil in a large cast-iron skillet over high heat. Rub the fish fillets on both sides with blackening seasoning.
  3. When the oil in the pan is smoking, add the fish and cook, undisturbed, for 3 minutes, until a dark crust forms.
  4. Flip the fillets and cook for an additional 2 to 3 minutes, until the fish flakes with gentle pressure from your finger.
  5. While the fish is cooking, toast the buns (cut side up) under the broiler. Place the shredded cabbage on the bun. Top with the hot fish, yogurt sauce, jalapeno.
