TUNA AND APPLE COTTAGE CHEESE SALAD

 

Ingredients:

  • 100g cottage cheese
  • 150g canned tuna
  • 1 green apple
  • 1 teaspoon extra virgin olive oil
  • ¼ teaspoon salt
  • 70g cabbage 
  • ½ teaspoon apple cider
  • 30g arugula (lettuce of choice)
  • 1 teaspoon lemon juice
  • black pepper as required
  • ½ tablespoon raisins

Method:

Step 1 / 4

Wash and peel the apples, then chop them into cubes on a chopping board. Also chop cabbage and arugula separately. With clean hands or using a spoon gently crumble the cottage cheese. Keep it aside.

Step 2 / 4

Take a deep bottomed bowl and add the chopped apple, canned tuna, cabbage, and arugula. Mix all ingredients together using a wooden spoon.

Step 3 / 4

Now to the chopped fruits mixture pour extra virgin olive oil followed by lemon juice, salt, apple cider vinegar and pepper. Mix all the ingredients in the bowl thoroughly.

Step 4 / 4

Carefully add the crumbled cottage cheese with raisins in the mixture and toss well. Serve!
