TOFU GREEN CURRY
Ingredients:
- 150g extra-firm tofu
- 50g onion chopped
- 1 teaspoon extra virgin olive oil (7g)
- 2 tablespoon green curry paste
- 2 garlic cloves
- 1/4 teaspoon cumin
- 50ml canned coconut milk
- 150g baby spinach, chopped
- 30g chopped cilantro
- lime wedge
- 50g cucumber sliced
- Salt and pepper to taste
Method:
- Dice tofu and Place on cutting board between paper towels; top with baking sheet. Top with large cans or other weight; let stand 10 minutes. Once all the liquid has escaped bake the tofu in the oven for approximately 10-15 minutes in 200c.
- Cook chopped onion with salt in olive oil in a pot over medium heat, stirring, 3 minutes. Add green curry paste, garlic cloves (minced), and cumin; cook, stirring, 1 minute then Simmer, covered, with coconut milk for 10 minutes.
- Stir in baby spinach (chopped); cook, for 2 minutes. Stir in roasted tofu (cubed) and chopped cilantro and season with salt and pepper.
- Transfer to a bowl; top with a lime wedge and serve with diced cucumber tossed with lime juice and herbs.
