TOFU GREEN CURRY

 

Ingredients:

  • 150g extra-firm tofu
  • 50g onion chopped
  • 1 teaspoon extra virgin olive oil (7g)
  • 2 tablespoon green curry paste
  • 2 garlic cloves
  • 1/4 teaspoon cumin
  • 50ml canned coconut milk
  • 150g baby spinach, chopped
  • 30g chopped cilantro 
  • lime wedge
  • 50g cucumber sliced
  • Salt and pepper to taste

Method:

  1. Dice tofu and Place on cutting board between paper towels; top with baking sheet. Top with large cans or other weight; let stand 10 minutes. Once all the liquid has escaped bake the tofu in the oven for approximately 10-15 minutes in 200c.
  1. Cook chopped onion with salt in olive oil in a pot over medium heat, stirring, 3 minutes. Add green curry paste, garlic cloves (minced), and cumin; cook, stirring, 1 minute then Simmer, covered, with coconut milk for 10 minutes.
  1. Stir in baby spinach (chopped); cook, for 2 minutes. Stir in roasted tofu (cubed) and chopped cilantro and season with salt and pepper.
  1. Transfer to a bowl; top with a lime wedge and serve with diced cucumber tossed with lime juice and herbs.
