SWEET POTATO SALAD

Ingredients:
- 150g sweet potatoes, peeled and cubed
- 1 teaspoon extra-virgin olive oil (7g)
- 50g red onion, thinly sliced
- 10g raisins
- 40g crumbled feta
For The Dressing:
- 2 tablespoon. apple cider vinegar
- 1 tablespoon. Dijon mustard
- 1 tablespoon. Sugar-free syrup
- 1/2 teaspoon. ground cumin
- 1/4 teaspoon. ground paprika
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°. On a large rimmed baking sheet, toss sweet potatoes, red onion and oil then season with salt and pepper.
- Distribute them evenly on a sheet in a single layer. Bake until tender, for about 20 minutes. Let cool for 10 minutes then transfer to a large bowl.
- Meanwhile, make the dressing: In a small bowl or a medium liquid measuring cup, whisk together vinegar, mustard, honey, and spices. Whisking constantly until emulsified. Season with salt and pepper.
- Toss sweet potatoes with dressing, raisins, and feta cheese. Serve warm or at room temperature.
