Sweet Potato Mash

 

Ingredients:

  • 250g sweet potatoes, peeled and cubed
  • 1 teaspoon butter
  • Salt and pepper to taste

Instructions:

  1. Boil the potatoes in salted water for 10 minutes or until tender, how long they take will depend on the size of the cubes. Drain very well and leave to steam dry for a couple of minutes.
  2. Toss the potatoes back into the pan and mash with butter using a fork or masher, then season well. Serve with more seasoning on top.
