Sweet Potato Hash

 

Ingredients: (Makes 1)

  • Eggs 2
  • Sweet Potato 1 medium
  • Chorizo 30g or 1 oz
  • Black Pepper 5 twists
  • Paprika 1 tsp

Instructions:

First, peel and cube the sweet potato. Next, to a pot of boiling water, add the sweet
potato and cook for 3 to 5 minutes until you can pierce a cube with a fork.

As that cooks, chop the chorizo. Add the chorizo to a pan and cook on low heat.

Once the sweet potato is ready, drain the water and add the sweet potato to the
pan along with the black pepper and paprika. Mix well and continue to cook for 2
to 3 minutes, stirring regularly.

Finally, create some space in the middle of the pan by moving the sweet potato
mixture with a spoon. Crack the eggs into the middle of the pan and cover with a
lid until cooked.

You can choose to serve directly from the pan or simply transfer the mixture to a
bowl.
