SWEET POTATO COOKIES

Ingredients:

  • 200g sweet potato (Smashed)
  • 1 teaspoon butter (7g)
  • 45g oats flour
  • 1 teaspoon baking powder
  • 1 tablespoon sugar-free syrup
  • Salt to taste
  • 30ml low-fat cold buttermilk

Instructions:

  1. Preheat the oven to 425° and grease a baking sheet with cooking spray. In a large bowl, combine oats flour, baking powder, and salt. Add mashed sweet potato, sugar syrup and buttermilk and stir until a rough dough starts to come together. Use your hands to help knead flour into biscuits until it just holds together.
  2. Dump the dough onto a clean surface and bring the dough together, using your hands to help incorporate any dry flour bits.
  3. Pat dough into a ½” thick square. Fold dough in half from left to right, then fold in half again from top to bottom. Pat dough back out into a ¾” thick square.
  4. Divide into equal balls and make the dough into the shape of a cookie.
  5. Brush tops of cookies with melted butter and bake at 180C until tops and bottoms are golden for about 20 minutes.
