STIR FRIED SHRIMP WITH MIX VEGETABLES

 

Ingredients:

  • 150g prawns (raw)
  • 1 teaspoon extra virgin olive oil (7g)
  • 100g cauliflower florets
  • 50g beans
  • 100g bell pepper
  • 1 teaspoon chili powder
  • ¼ teaspoon turmeric
  • 50g onion
  • 1 green chili
  • 1/2 teaspoon ginger
  • 1 cloves garlic
  • 1/2 sprig curry leaves
  • 50g tomato, chopped
  • 50ml water
  • Salt and pepper to taste

Instructions:

  1. To prepare peel, shell and devein the prawns. Once done, marinate them using turmeric, chilli powder and salt.
  2. Put a saucepan on medium flame and heat oil in it. When the oil is hot enough, add the marinated prawns and stir fry them on medium flame.
  3. When shrimps are almost cooked, add the sliced onion, green chilies along with ginger and garlic and rest of the vegetables in the pan. Stir fry on high flame for 3-4 minutes.
  4. When the onions are caramelized, and vegetables are fried add chopped tomato with the water.
  5. Season with salt and pepper. Cover and simmer for 10 more minutes on medium heat till the vegetables are soft and tender and serve hot.
