SINGAPORE NOODLES

 

Ingredients:

  • 125g low-calorie, Slendier noodles, well rinsed
  • 150g prawns
  • 1 teaspoon extra virgin olive oil (7g)
  • 1 garlic clove grated
  • ½ teaspoon of ginger grated
  • 50g carrot peeled and sliced thinly
  • 50g red capsicum sliced thinly
  • 50g cabbage sliced thinly
  • 20g spring onions sliced thinly
  • 1 tablespoon soy sauce
  • 1 tablespoon tomato sauce
  • 1 teaspoon curry powder
  • 1 teaspoon turmeric
  • Salt and pepper to taste

Instructions:

  1. Prepare Slendier noodles as per instructions on the pack
  2. Add oil to the pan add garlic and ginger, cook until the aroma releases.
  3. Add prawns and cook for 2-3 minutes or until cooked.
  4. Add carrot, cabbage, and red capsicum and cook until tender.
  5. Add curry powder, turmeric, tomato sauce and soy sauce.
  6. Toss the noodles and coat with sauce.
  7. Garnish and serve with spring onions.
