SESAME PEANUT NOODLES
Ingredients:
For the dressing
- 1 tsp sesame oil
- 1 tbs chopped garlic
- 1 tbs soy sauce
- 1 tbs sweet chilli sauce
- 10g smooth peanut butter
- 2 tbs lime juice
For the salad
- 70g cherry tomatoes
- 150g beansprouts
- 1 red bell pepper (deseeded and cut into small strips)
- 2 spring onions (finely sliced)
- 250g Slendier noodles
- 5g sesame seeds
- 4 tbs chopped fresh coriander
Method:
- Whisk together all the dressing ingredients in a bowl or jug.
- Put the cherry tomatoes, beansprouts, red bell pepper strips, sliced spring onions and the noodles into a bowl.
- Pour the dressing over them and mix thoroughly to coat everything well.
- Sprinkle with the sesame seeds and chopped coriander.
