SESAME PEANUT NOODLES

 

Ingredients: 

For the dressing

  • 1 tsp sesame oil
  • 1 tbs chopped garlic 
  • 1 tbs soy sauce
  • 1 tbs sweet chilli sauce
  • 10g smooth peanut butter
  • 2 tbs lime juice

For the salad

  • 70g cherry tomatoes
  • 150g beansprouts 
  • 1 red bell pepper (deseeded and cut into small strips)
  • 2 spring onions (finely sliced)
  • 250g Slendier noodles 
  • 5g sesame seeds
  • 4 tbs chopped fresh coriander

Method:

  • Whisk together all the dressing ingredients in a bowl or jug.
  • Put the cherry tomatoes, beansprouts, red bell pepper strips, sliced spring onions and the noodles into a bowl.
  • Pour the dressing over them and mix thoroughly to coat everything well.
  • Sprinkle with the sesame seeds and chopped coriander.
