RED SKILLET CORN PRAWNS

Ingredients:

  • 150g Prawns
  • 1 teaspoon extra virgin olive oil (7g), divided
  • 5g celery, diced
  • 50g onions, finely sliced 
  • 80g carrot
  • 50g canned corn, sliced
  • 100g tomatoes, chopped
  • 1 clove of garlic, minced
  • 1 teaspoon apple cider vinegar
  • pinch of paprika
  • 100ml water
  • salt and pepper to taste

Instructions:

  1. Heat the oil in a pan over medium-high heat.
  2. Add the minced garlic, celery along with the sliced onion and cook for 1 minute, then add the chopped tomatoes and cook for another 5 minutes. 
  3. Next add the prawns , carrot, corn and the water. Cook for 3 – 4 minutes covered with a lid. 
  4. Lastly add the pinch of paprika, vinegar and season with salt and pepper to taste.
  5. Serve warm. Enjoy!
