RED SKILLET CORN PRAWNS

Ingredients:
- 150g Prawns
- 1 teaspoon extra virgin olive oil (7g), divided
- 5g celery, diced
- 50g onions, finely sliced
- 80g carrot
- 50g canned corn, sliced
- 100g tomatoes, chopped
- 1 clove of garlic, minced
- 1 teaspoon apple cider vinegar
- pinch of paprika
- 100ml water
- salt and pepper to taste
Instructions:
- Heat the oil in a pan over medium-high heat.
- Add the minced garlic, celery along with the sliced onion and cook for 1 minute, then add the chopped tomatoes and cook for another 5 minutes.
- Next add the prawns , carrot, corn and the water. Cook for 3 – 4 minutes covered with a lid.
- Lastly add the pinch of paprika, vinegar and season with salt and pepper to taste.
- Serve warm. Enjoy!
