PUMPKIN PIE PROTEIN OVERNIGHT OATS WITH CHIA
Ingredients:
- 150g Greek yogurt
- 150ml Unsweetened almond milk
- 150g pumpkin puree
- 2 tablespoon sugar free syrup
- 1/2 teaspoon vanilla extract
- 1 scoop whey protein powder (35g) vanilla flavour
- 45g rolled oats
- 2 teaspoons chia seeds
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground ginger
- 20g protein crackers, crushed
Instructions:
- In a medium bowl, mix together greek yogurt, almond milk, pumpkin puree, vanilla, protein powder and syrup until well combined. Stir in oats, chia seeds and spices. Pour into a glass jar or container and place in fridge for 4 hours or overnight.
- Top with crushed protein crackers before serving.
