PUMPKIN OMELETTE

 

Ingredients: 

  • 1 whole egg 
  • 150g egg white
  • 250g pumpkin, grated 
  • 10g coriander leaves
  • 1 teaspoon extra virgin olive oil (7g)
  • 1 teaspoon toasted sesame seeds
  • Salt and Pepper to taste

Method:

  1. In a large bowl, beat the eggs and toss in salt and pepper.
  2. Add in the grated Pumpkins and the chopped coriander leaves mix well and set aside
  3. Heat a non-stick skillet and add the oil.
  4. Pour the mixture and cook under medium – low heat with the lid on for 5 minutes on one side.
  5. Flip the omelette with the help of a plate and cook for another 5 minutes with the lid off.
  6. Top with sesame seeds and serve.
