PUMPKIN OMELETTE
Ingredients:
- 1 whole egg
- 150g egg white
- 250g pumpkin, grated
- 10g coriander leaves
- 1 teaspoon extra virgin olive oil (7g)
- 1 teaspoon toasted sesame seeds
- Salt and Pepper to taste
Method:
- In a large bowl, beat the eggs and toss in salt and pepper.
- Add in the grated Pumpkins and the chopped coriander leaves mix well and set aside
- Heat a non-stick skillet and add the oil.
- Pour the mixture and cook under medium – low heat with the lid on for 5 minutes on one side.
- Flip the omelette with the help of a plate and cook for another 5 minutes with the lid off.
- Top with sesame seeds and serve.
