PRAWN & POTATO POKE BOWL
Ingredients:
- 1 lime, juiced
- 1 red chilli, deseeded and finely chopped
- 1 teaspoon extra virgin olive oil (7g)
- 150g prawns (raw)
- 100g potatoes
- 100g mushrooms
- 50g spinach
- 50g mango
- 100g carrots, julienned
- 3 spring onions, sliced
- 1 teaspoon sesame seeds
- Salt and pepper to taste
Instruction:
- Whisk the lime juice, chilli and oil together in a bowl. Season, add the prawns and leave to marinate for 10 minutes.
- Meanwhile heat some water and boil the potatoes till soft and smooth. Once the potatoes are cooked grate the potatoes till mushy. Season with salt and pepper, set aside
- Then heat a skillet and add oil. Once hot cook the marinated prawns for 5 minutes. When the prawns are cooked remove from the pan and add mushrooms, spinach to the same skillet and brown well. Arrange the vegetables and spring onions with the potatoes in a bowl. Sprinkle some sesame seeds.
