PEA & POTATO SOUP

Ingredients:
- 1 teaspoon extra virgin olive oil (7g)
- 250g Carisma potato, peeled and cut into small chunks
- 50g onion, chopped
- 500ml vegetable stock
- 50g frozen pea
- 10g parsley leaves, chopped
- salt and pepper to taste
Instructions:
- Heat the oil in a large saucepan, then fry the onion for 5 minutes until softened. Add the potatoes and stock, then bring to a boil. Cover and simmer for 10-15 minutes until tender, adding the peas 2 minutes before the end of the cooking time.
- Blend half of the vegetables and stock in a food processor or using a hand blender until smooth, then stir through the reserved vegetables, and chopped parsley, and season with some salt and pepper.
- Serve warm and enjoy.
