PASTA CHICKEN SALAD RECIPE

 

Ingredients:

  • 65g raw pasta penne
  • 150g boneless chicken breast
  • 1 small tomato
  • 100g cauliflower
  • ½ tsp black pepper
  • salt as required
  • 2 cloves garlic
  • 2 leaves lettuce loose-leaf
  • ½ teaspoon mixed herbs of any choice
  • 2 cup water

For Dressing

  • 1/2 teaspoon vinegar
  • 1 teaspoon virgin olive oil
  • 1/2 tablespoon lemon juice
  • 1/2 handful basil

Method:

Step 1 / 6 

To make this pasta salad, which is super healthy, take a medium sized pan and put four to five cups of water. When it comes to a boil, add pasta with a little salt and one teaspoon oil. The salt is important as your pasta will taste bland if you add salt only in the sauce and the oil will prevent pasta from sticking together.

Step 2 / 6 

Cook the pasta and drain the excess water, and rinse under running cold water. You can follow this trick, if you feel your pasta is slightly overdone, add some ice to retain the right texture of the pasta. And also season the chicken with salt and pepper and grill it till cooked for approximately 8 minutes in a non-stick pan.

Step 3 / 6 

Meanwhile, boil some water in a bowl and add the broccoli, after two minutes, drain the water and add some ice. Put the lettuce and tomatoes in ice-cold water so that they retain their crunch and freshness.

Step 4 / 6 

Take a deep serving bowl, preferably a wooden or a glass one. You can also serve the pasta in a stone bowl as is the latest trend. Take the lettuce leaves, roughly chop them and put them in the bowl. Now add tomatoes and broccoli and drizzle it with some lemon juice, vinegar and olive oil. Add crushed garlic. If you love the flavour of smoky garlic, stir fry it and then add to the salad. This will remove the raw smell of garlic.

Step 5 / 6 

Season with salt, pepper, and mixed herbs. You can also add a spoon of sugar free syrup if you want it to have a slightly sweet taste. Finally toss again all the ingredients together and garnish with basil leaves.

Step 6 / 6 

You can also use some toasted chopped almonds and walnuts for garnishing. This pasta is ideally served chilled.
