PAN-FRIED OKRA AND TOMATOES

 

Ingredients:

  • 150g okra
  • 10g basil
  • 1 teaspoon olive oil (7g)
  • salt as required
  • 100g tomatoes
  • black pepper as required
  • 1 medium onion

Method:

Step 1

To prepare this dish, wash and pat dry the okra. Using a kitchen towel, pat dry them and then chop the okra. Then, chop the onions in a small bowl. Next, take a bowl and add washed quartered tomatoes in them along with the chopped okra, shallots, salt, black pepper powder, and a little olive oil. Mix well.

Step 2

Then, put a pan over medium flame. When the pan is hot enough, add the okra with cherry tomatoes and stir fry slightly. Cover the lid and cook until the vegetables start to colour. Stir after 5-10 minutes and once they are done, transfer in a bowl and garnish with some basil leaves. Serve hot!
