MUSHROOM SALAD WITH CARROT, PARSLEY, AND FETA CHEESE

 

Ingredients:

  • 60g Feta Cheese
  • 10g parsley
  • 100g mushrooms, wiped clean
  • 200g carrot
  • 1 teaspoon zest of a lemon
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon white wine vinegar
  • 1 teaspoon extra virgin olive oil (7g)
  • 1 teaspoon flax seed
  • Salt and pepper to taste

Instructions:

  1. Wash the mushrooms well and air fry for approximately 10 minutes on 180C.
  2. Next slice the mushrooms and shred the carrots. Mix them in a bowl.  
  3. Zest the lemon over the salad and top with cracked black pepper to taste. In a small bowl, whisk together the lemon juice, vinegar, olive oil, and salt until emulsified. Drizzle over the salad and serve right away and top with Flax Seed.
