MUSHROOM SALAD WITH CARROT, PARSLEY, AND FETA CHEESE
Ingredients:
- 60g Feta Cheese
- 10g parsley
- 100g mushrooms, wiped clean
- 200g carrot
- 1 teaspoon zest of a lemon
- 1 tablespoon fresh lemon juice
- 1 teaspoon white wine vinegar
- 1 teaspoon extra virgin olive oil (7g)
- 1 teaspoon flax seed
- Salt and pepper to taste
Instructions:
- Wash the mushrooms well and air fry for approximately 10 minutes on 180C.
- Next slice the mushrooms and shred the carrots. Mix them in a bowl.
- Zest the lemon over the salad and top with cracked black pepper to taste. In a small bowl, whisk together the lemon juice, vinegar, olive oil, and salt until emulsified. Drizzle over the salad and serve right away and top with Flax Seed.
