Lemon Radish Bulgar Wheat Salad

Ingredients: (Makes 4)
- Fennel 2 bulbs
- Garlic 3 cloves
- Salt 2 tsp
- Radish 300g or 10.6oz
- Chicken Breast 2 (125g or 4.4oz per breast)
- Bulgar Wheat 120g or 4.2oz
- Spring Onion 4
- Olive Oil 2 tbsp
- Olive Oil 1 tsp
- Fresh Parsley 25g or 0.8oz
Instructions:
Rinse the bulgar wheat under cold water. Place in a pot with over 400ml boiling
water with the parsley stalks, 1 tsp salt and 1 tsp olive oil. Cook for for 15-20 minutes
until tender.
In a large bowl, combine the crushed garlic, lemon zest, lemon juice, remaining 1
tsp salt, black pepper, and 2 tbsp extra virgin olive oil. Stir in the halved radishes,
sliced fennel, and salad onions. Mix well to coat.
Fold the cooled bulgar wheat into the dressed vegetables. Add in the shredded
poached chicken, radish leaves (if using), and most of the chopped parsley and
fennel fronds. Allow the salad to sit for 10 minutes to absorb the flavours.
Sprinkle with remaining parsley and fennel fronds.
