LEMON BUTTER BAKED WHITE FISH WITH VEGETABLES

 

Ingredients: 

(makes 01 serving)

  • 150g white fish fillets such as tilapia, cod
  • 1 teaspoon butter
  • 2 cloves garlic
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons minced herbs such as parsley, oregano, basil
  • 1 lemon zested and thinly sliced
  • 250g of choice of vegetables

Method:

  • Pre-heat oven to 180c for 10min.
  • In a small bowl mix together butter with garlic, salt, pepper, minced herbs, and lemon zest and add the cut vegetables.
  • Spray a baking dish with cooking spray and place fish fillets in a single layer.
  • Evenly place the vegetables on top of the seasoned fish and place the thinly sliced lemon on top.
  • Bake until fish flakes easily with a fork and the vegetables are tender. about 15-20 minutes.
