LEMON BUTTER BAKED WHITE FISH WITH VEGETABLES
Ingredients:
(makes 01 serving)
- 150g white fish fillets such as tilapia, cod
- 1 teaspoon butter
- 2 cloves garlic
- 1 teaspoon salt
- ½ teaspoon pepper
- 2 tablespoons minced herbs such as parsley, oregano, basil
- 1 lemon zested and thinly sliced
- 250g of choice of vegetables
Method:
- Pre-heat oven to 180c for 10min.
- In a small bowl mix together butter with garlic, salt, pepper, minced herbs, and lemon zest and add the cut vegetables.
- Spray a baking dish with cooking spray and place fish fillets in a single layer.
- Evenly place the vegetables on top of the seasoned fish and place the thinly sliced lemon on top.
- Bake until fish flakes easily with a fork and the vegetables are tender. about 15-20 minutes.
