High Protein Blueberry Bake

Ingredients: The ingredient amounts are for four servings.
- Greek Yoghurt 240g or 8.4oz, 0% fat
- Egg 2
- Flour 120g or 4.2oz
- Frozen Blueberries 100g or 3.5oz
- Whey Protein 15g or 0.5oz, Vanilla
- Semi Skim Milk 15ml or 0.5fl oz
- Baking Powder 1 tsp
Instructions:
In a medium mixing bowl, combine the Greek yoghurt, plain flour, eggs, 2
tablespoons of sweetener, baking powder, and baking soda. Stir the mixture until a
thick, sticky dough forms and all ingredients are well incorporated.
Prepare an oven-proof dish or air fryer basket. Using two spoons, scoop the dough
and drop into the dish to form small, rustic dough balls. Press the blueberries into
the dough balls, ensuring they are evenly distributed. Sprinkle a little extra
sweetener over the top for a crunchy, caramelised finish.
Cook at 170°C (338°F) for approximately 20 minutes. The buns should be golden
brown on the outside and spring back when lightly touched in the center.
While the buns are cooling slightly, whisk together the protein powder and milk in a
small ramekin until a smooth, pourable glaze forms. Drizzle the glaze generously
over the warm buns. Serve immediately while fluffy and fresh.
