GROUND BEEF MEATLOAF MUFFINS

 

Ingredients:

  • 150g Ground Red Meat (lean beef, veal, lamb leg, kangaroo, goat, camel) 
  • 2 whole eggs
  • 50g onion, minced
  • 3 garlic cloves, minced
  • 1 tablespoon fountain sugar-free BBQ sauce 
  • 1/4 teaspoon dried thyme
  • salt, black pepper to taste

For Topping

  • 100g sweet potato, peeled and cubed
  • 1 teaspoon butter (7g)
  • salt to taste
  • 1 teaspoon toasted sesame seeds

Instructions:

  1. Preheat oven to 350°F.
  2. Lightly grease muffin cups. Set aside.
  3. Heat a skillet over medium heat.
  4. Add the onion and cook until translucent.
  5. Add the garlic and cook for 30 seconds.
  6. In a bowl add the cooked onions, ground beef, BBQ sauce, dried thyme, eggs, and salt and black pepper to taste.
  7. With clean hands, mix the ingredients until well combined.
  8. Divide the meat mixture evenly among the molds. Bake in preheated oven for 20-25 minutes.
  9. Meanwhile, make the sweet potato topping.
  10. Place the sweet potato and 3 tablespoons of water in a microwave-safe glass dish. Cover with a lid and cook on HIGH for 8 minutes. Remove from the microwave oven and drain well.
  11. Place the sweet potato and butter in a food processor and process until smooth.
  12. Season to taste with salt and black pepper.
  13. Remove the meatloaf muffins from the oven and quenelle the whipped sweet potato on top.
  14. Sprinkle sesame seeds and serve immediately.
