GRILLED FISH WITH EGGPLANT SANDWICH

 

Ingredients:

  • 150g White Fish (Barramundi, Basa, Prawns, Calamari, Ling, Snapper, Whiting)
  • 1 teaspoon extra virgin olive oil (7g) 
  • 1 slice whole meal bread
  • 50g eggplant
  • 50g zucchini
  • 50g red bell pepper
  • 1 tablespoon pesto
  • 45g low fat mozzarella cheese 
  • 1 teaspoon lime juice
  • Salt and pepper to taste

Instructions:

  1. Season the fish with salt pepper and lime and set aside for about 15 minutes. Let marinate well.
  2. Prep Veggies: Slice eggplant, bell pepper and zucchini. Lightly drizzle with olive oil, salt and pepper and grill about 5 minutes, until soft and slightly charred.
  3. Roast Pepper: Place bell pepper directly onto grill. Cook 5 minutes, rotating often, until outside is charred and then slice into strips.
  4. Meanwhile grill the fish fillet approximately 4 minutes each side or till well cooked.
  5. Assemble: take the Slice of bread and spread pesto onto top. Layer the eggplant, zucchini, red bell pepper slices, then cheese. Once topped with all fillings pop the sandwich in the oven for 5minutes for the cheese to melt. Serve immediately.
