GRILLED FISH AND VEG RICE

 

Ingredients:

  • 150g white fish fillet 
  • 130ml water
  • 65g basmati rice (raw)
  • 1 teaspoon butter (7g)
  • 50g radish, trimmed, cut lengthways
  • 50g corn
  • 50g carrots, trimmed
  • 30g low fat parmesan cheese
  • 2 tablespoon tzatzikis (low fat diluted yoghurt mixed with cucumber, garlic, salt and herbs) 
  • 1 lemon, cut in wedges

Method:

Step 1

Place rice in a small saucepan and add water. Simmer, covered, for 10-15 minutes or until cooked. Add corn to the mixture in the last 2 minutes of cooking. Fluff with a fork and keep warm. Meanwhile, steam radish and carrots for 6-8 minutes or until tender. Keep warm.

Step 2

Preheat grill and baking tray. Place fish fillets on a piece of tinfoil and sprinkle with parmesan. Place tinfoil and fish on the hot baking tray and place under grill. Grill fish for 2-3 minutes (on one side only) or until cooked through and cheese is golden.

Step 3

Serve fish with rice mixture, vegetables, tzatziki, and lemon wedges.
