GRILLED CHICKEN SALAD SANDWICH

 

Ingredient:

  • 1 tablespoon low fat mayonnaise
  • 1 teaspoon butter (7g)
  • ½ teaspoon garlic powder
  • 150g (raw weight) boneless chicken breast slices, grilled and chopped
  • ½ celery stalks, chopped
  • 1 tomato deseeded, chopped
  • 2 slices white bread, toasted
  • 5g cilantro, chopped
  • 1 large red leaf lettuce leaves
  • 50g cucumber deseeded, chopped
  • ¼ teaspoon lime juice
  • Salt and pepper to taste

Instructions:

Step 1

In a large bowl add in the chopped cucumber, tomato, cilantro, chopped grilled chicken, low fat mayonnaise, garlic powder. Mix well till combined and add lime juice, then season with salt and pepper. 

Step 2

Take a pan and heat till moderately hot. Then take the slices of bread spread it with butter on each side and toast well in the pan.

Step 3 

Spread the chicken salad between the slices of toast, top with a lettuce leaf. Cut in half and serve.
