GOTU KOLA KANDA
Ingredients:
(makes 01 serving)
- 30g (Cooked Weight) Red Rice
- 100g Gotu Kola (Roughly chopped)
- 200ml Almond milk
- 70ml Water
- 1 teaspoon Ginger (Finely chopped)
- 2 Bulbs Garlic (Finely chopped)
- 1 teaspoon Lemon Juice
- Salt to taste
Method:
- Add salt and boil with water.
- Blend crushed Gotu kola with 200ml Almond milk.
- Add Ginger, Garlic, and the juice of Gotu kola to the cooked Rice and bring it to a boil.
- Add lemon juice for seasoning.
Modifications:
- If you like to make more portions, multiply the ingredients into the number of portions.
- You can enhance the flavour by adding more greens into the porridge.
- Serve plain or with a piece of Jaggery and roasted slice bread.
