GOTU KOLA KANDA

 

Ingredients:

(makes 01 serving)

  • 30g (Cooked Weight) Red Rice
  • 100g Gotu Kola (Roughly chopped)
  • 200ml Almond milk
  • 70ml Water
  • 1 teaspoon Ginger (Finely chopped)
  • 2 Bulbs Garlic (Finely chopped)
  • 1 teaspoon Lemon Juice
  • Salt to taste

Method:

  • Add salt and boil with water.
  • Blend crushed Gotu kola with 200ml Almond milk.
  • Add Ginger, Garlic, and the juice of Gotu kola to the cooked Rice and bring it to a boil.
  • Add lemon juice for seasoning.

Modifications:

  • If you like to make more portions, multiply the ingredients into the number of portions.
  • You can enhance the flavour by adding more greens into the porridge. 
  • Serve plain or with a piece of Jaggery and roasted slice bread.
