EGG, SPROUTS, AND FETA CRISPY WRAP

Ingredients:

  • 1 low mission carb wrap 
  • 1 teaspoon extra-virgin olive oil (7g)
  • 5g diced sundried tomatoes
  • 50g bean sprouts
  • 120g egg whites
  • 2 tablespoons low-fat feta crumbles 
  • Salt and pepper to taste

Instructions:

  1. In a small frying pan, heat olive oil with sun-dried tomatoes over medium-low heat. Cook, stirring frequently until tomatoes are softened (3-4 minutes). Add sprouts and cover for 2-3 minutes or until the sprouts are cooked, stirring once or twice as needed.
  2. Remove from pan and set aside.
  3. Carefully wipe out the pan with a paper towel and return to medium-low heat and cook one side of the wrap. When its half cooked flip the carb wrap.
  4. Add egg whites on top and stir once, and cover and cook for 4-5 minutes, or until set.
  5. While the egg is cooking, layer on sprouts and then feta and season with salt and pepper. 
  6. If desired, return to the dry pan (medium heat) to get a crispy outside of the wrap. Flip after 2-3 minutes or until golden brown on each side. Cut in half and enjoy immediately.
