EGG PASTA SALAD

 

Ingredients:

  • 65g raw pasta penne
  • 5 Eggs (Use only 2 whole eggs & only the egg whites of the remaining 3 eggs) 
  • 3 tomatoes
  • 10g mozzarella
  • ½ teaspoon vinegar
  • ¼ onion
  • ¼ red bell pepper
  • ¼ cucumber
  • 20g black olives

For Dressing

  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 teaspoon extra virgin olive oil

Method:

Step 1/4

Put a deep-bottomed pan on medium flame, add water in it and bring it to a boil. Add the pasta in the boiling water and add vinegar along with salt in it. Let the pasta cook for about 10-12 minutes. Once the pasta is boiled, turn off the flame.

Step 2/4

Boil all 5 eggs and keep aside for few minutes and slice the boiled eggs (Use only 2 whole eggs & only the egg whites of the remaining 3 eggs)

Step 3/4

Transfer the boiled pasta in a bowl and add in the chopped tomato, chopped cucumber, finely chopped onion, olives, and red bell pepper. Mix all the ingredients well and add the sliced eggs above the prepared salad . In a small bowl, mix salt, remaining vinegar, extra virgin olive oil, and black pepper powder.

Step 4/4

Sprinkle some grated cheese over the salad and pour the vinegar dressing, toss carefully. Enjoy!
