Crispy Smashed Sweet Potato & Eggs

Ingredients: The ingredient amounts are for one servings.

  • Sweet Potato 1 medium
  • Egg 2
  • Greek Yoghurt 1 tbsp, 0% fat
  • Chilli Oil 1 tsp
  • Salt pinch
  • Black Pepper 1 twist
  • Dill 1 tsp, chopped

Instructions:

Bring a pot of water to the boil. Add the eggs and cook for 6 minutes. Transfer to
cold water to stop the cooking, then peel.


Pierce the sweet potato with a fork. Microwave for 6 to 8 minutes until soft.


Place the sweet potato between two pieces of baking paper and press down to
flatten.


Transfer to a plate. Add a dollop of Greek yogurt and drizzle with chilli oil. Place the
egg on top and season with salt and pepper. Finish with fresh dill and enjoy.
