CREAMY WHITE CHICKEN CHILI

Ingredients:
- 150g boneless chicken breast
- 1 teaspoon extra virgin olive oil, (7g)
- 1 clove of garlic, minced
- 50g onion, minced
- 300ml water
- 50g baby corn
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 1 teaspoon paprika
- 1/2 teaspoon oregano
- 2 tablespoons low-fat plain yogurt
- 45g low-fat mozzarella cheese, shredded
- 10g cilantro
- salt and pepper to taste
Instructions:
- In a pot, cook the onion and garlic in the oil in medium heat.
- Meanwhile cut the chicken into cubes.
- Add in the cubed chicken and cook for about 10 minutes (or until it browns).
- Add in the water and bring to a simmer.
- Add in the sliced baby corn and all the spices (seasonings).
- Continue to simmer for about 10 minutes.
- In a small bowl, whisk the yogurt until smooth.
- Add the yogurt and cheese to the soup.
- Season the soup with salt and pepper.
- Mix in the cilantro and cook for another 5 minutes.
- Serve hot, and enjoy!
