CREAMY WHITE CHICKEN CHILI

Ingredients:

  • 150g boneless chicken breast
  • 1 teaspoon extra virgin olive oil, (7g)
  • 1 clove of garlic, minced 
  • 50g onion, minced
  • 300ml water
  • 50g baby corn
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 2 tablespoons low-fat plain yogurt
  • 45g low-fat mozzarella cheese, shredded
  • 10g cilantro 
  • salt and pepper to taste

Instructions:

  1. In a pot, cook the onion and garlic in the oil in medium heat.
  2. Meanwhile cut the chicken into cubes.
  3. Add in the cubed chicken and cook for about 10 minutes (or until it browns).
  4. Add in the water and bring to a simmer.
  5. Add in the sliced baby corn and all the spices (seasonings).
  6. Continue to simmer for about 10 minutes.
  7. In a small bowl, whisk the yogurt until smooth.
  8. Add the yogurt and cheese to the soup.
  9. Season the soup with salt and pepper.
  10. Mix in the cilantro and cook for another 5 minutes. 
  11. Serve hot, and enjoy!
