CREAMY BEEF ONE-POT NOODLES

Ingredients:
- 150g Ground Red Meat (Lean Beef, Veal, Lamb Leg, Kangaroo, Goat, Camel)
- 1 teaspoon extra virgin olive oil (7g)
- 125g low-calorie Slendier Noodles
- 50g onion, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 100g tomato, halved
- 50ml vegetable broth
- 100ml low-fat almond milk
- 1g nutritional yeast
- 5g parsley
- Salt and pepper to taste
Instructions:
- Cook the pasta according to the package directions.
- In a large pot over medium heat, add the olive oil, ground beef and onion and cook for 7-10 minutes until the meat is no longer pink.
- Add the garlic and tomato paste and cook for 3 more minutes, stirring occasionally.
- Add the tomatoes and cook for 3-5 more minutes, until the skins begin to wrinkle and the tomatoes begin to release liquid.
- Season with salt and pepper, then add the vegetable broth, milk, and noodles and stir until combined.
- Bring to a boil, then cover, reduce heat, and let simmer for 10 minutes or until most liquid is absorbed.
- Add the nutritional yeast and stir until combined.
- Remove from heat and sprinkle with chopped parsley.
- Serve immediately and enjoy!
