COTTAGE CHEESE SCRAMBLED EGG WITH CORIANDER

 

Ingredients:

  • 3 whole eggs
  • 1 teaspoon extra virgin olive oil (7g)
  • 150g low fat cottage cheese
  • 50g green bell peppers, chopped
  • 50g onion, chopped
  • 1 tomato, chopped
  • 20g cilantro chopped
  • Salt and pepper

Method:

  1. Preheat a non-stick pan. Spray with cooking spray.
  1. Whisk the eggs. Stir in the cottage cheese, vegetables. Season with salt and pepper.
  1. Pour the egg mixture into the pan. Cook the eggs stirring for 5 minutes until eggs are cooked through.
