COTTAGE CHEESE SCRAMBLED EGG WITH CORIANDER
Ingredients:
- 3 whole eggs
- 1 teaspoon extra virgin olive oil (7g)
- 150g low fat cottage cheese
- 50g green bell peppers, chopped
- 50g onion, chopped
- 1 tomato, chopped
- 20g cilantro chopped
- Salt and pepper
Method:
- Preheat a non-stick pan. Spray with cooking spray.
- Whisk the eggs. Stir in the cottage cheese, vegetables. Season with salt and pepper.
- Pour the egg mixture into the pan. Cook the eggs stirring for 5 minutes until eggs are cooked through.
