Cottage Cheese & Peach Toast

 

Ingredients: (Makes 1)

  • Peach 1 medium
  • Sourdough Bread 2 slices
  • Cottage Cheese 2 tbsp, fat free
  • Honey 1 tsp
  • Flaked Almonds 1/2 tsp
  • Brown Sugar pinch

Instructions:

Begin by preparing the peach. Preheat your oven or use a pan for roasting. Place
the sliced peach on a baking tray or in the pan. Sprinkle a pinch of brown sugar
and drizzle honey over the peach slices. Roast them until they are soft and have a
slight caramelization, around 10-15 minutes, depending on your method.

While the peach is roasting, toast the sourdough bread slices to your desired level
of crispness, either in a toaster or on a skillet.

Once the bread is toasted, spread the cottage cheese evenly over each slice.
Once the peach slices are roasted and caramelized, place them on top of the
cottage cheese layer.

For added sweetness and texture, sprinkle a pinch of brown sugar over the
peaches and cottage cheese. Finally, garnish with a sprinkle of flaked almonds for
a nutty crunch.
