CHOCOLATE LENTIL PROTEIN MUFFINS

Ingredients:
- 25g lentils, drained and rinsed
- 3 whole eggs
- 1 teaspoon coconut oil, melted (7g)
- 100ml unsweetened low-fat almond milk
- 30g unsweetened cocoa powder
- 30g all-purpose flour
- 120g ripe banana
- 1 tablespoon sugar-free syrup
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 45g dark chocolate chips
Instructions:
- Preheat the oven to 350° F.
- Prepare muffin cups by lining them with muffin papers
- Place banana, lentils, eggs, sugar-free syrup, cocoa powder, baking soda, coconut oil, milk, flour, and vanilla extract into a blender or food processor; cover. Blend until smooth.
- Add the chocolate chips and stir gently using a wooden spoon.
- Fill muffin cups about 2/3 full
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool completely and enjoy!
