CHOCOLATE LENTIL PROTEIN MUFFINS

Ingredients:

  • 25g lentils, drained and rinsed
  • 3 whole eggs
  • 1 teaspoon coconut oil, melted (7g)
  • 100ml unsweetened low-fat almond milk
  • 30g unsweetened cocoa powder
  • 30g all-purpose flour
  • 120g ripe banana 
  • 1 tablespoon sugar-free syrup
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 45g dark chocolate chips

Instructions:

  1. Preheat the oven to 350° F.
  2. Prepare muffin cups by lining them with muffin papers
  3. Place banana, lentils, eggs, sugar-free syrup, cocoa powder, baking soda, coconut oil, milk, flour, and vanilla extract into a blender or food processor; cover. Blend until smooth.
  4.  Add the chocolate chips and stir gently using a wooden spoon.
  5. Fill muffin cups about 2/3 full
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Cool completely and enjoy!
